Carmen’s Red Neck Wild is a hard neck, rocambole garlic with an average of 9 cloves per bulb. It is our most unique and truly one-of-a-kind garlic variety. This special garlic is instantly recognized and coveted by garlic enthusiasts. The Red Neck Wild grows on a private wetland close to Klamath Falls, Oregon. We harvest the bulbils every fall and plant them in nursery beds. These produce first generation garlic rounds, which are then harvested and replanted in the fall at our farm. The third season produces the garlic bulbs that we offer for sale. This is a long and meticulous process however it keeps our wild wetland bed protected and keeps our seed stocks disease free. It is important to note to our garlic-holics that Bair Organic grows all our production seed on-farm.
